ASPARAGUS SLAW

Partially cook fresh spring vegetables to add to coleslaw. Serve with favorite ham pork or chicken and mashed potatoes.

ASPARAGUS SLAW

1 1/2 cups fresh asparagus pieces

1 tablespoon water

2 tablespoons sour cream

2 tablespoons mayonnaise

1 tablespoon frozen pineapple or orange juice concentrate

1/2 teaspoon sugar

1 teaspoon white vinegar

3 cups coleslaw mix

1. Combine asparagus and water in 2-cup measure or casserole. Cover tightly.

2. MICROWAVE (100%) 2 to 3 minutes or until asparagus is crisp-tender. Let stand 3 minutes. Uncover; cool in ice water. Drain well.

3. In serving bowl, combine sour cream, mayonnaise, concentrate, sugar and vinegar; mix well. Add coleslaw mix and cooled asparagus; mix well.

TIPS · To make your own coleslaw mix, shred a scant 3 cups cabbage. Add a little shredded red cabbage and shredded carrot.
>Leftovers refrigerate well for serving another day.

>Try this dressing on other salad greens with fresh fruit added.

>To reduce fat, use lite sour cream and mayonnaise.
