CREAMY CHEESECAKE PIE

This makes an easy dessert for winter entertaining. Use prepared fruit pie filling or sweetened fresh fruit for a pretty topping.

CREAMY CHEESECAKE PIE

Crust:

1 cup chocolate cookie crumbs
3 tablespoons sugar
3 tablespoons butter

Filling:

2 pkgs. (8 oz. each) cream cheese

1/2 cup sugar

2 eggs
1/2 teaspoon almond extract

1/2 cup sour cream

1. Combine crumbs, sugar and butter for crust in microwave-safe mixing bowl.

2. MICROWAVE (100%), uncovered, 60 to 75 seconds or until butter is melted, stirring once. Stir to mix well. Press into bottom and up sides of 9-inch glass pie plate. Set aside.

3. MICROWAVE (100%) unwrapped cream cheese in microwave-safe mixing bowl 60 to 85 seconds or until softend, stirring once. Beat in sugar until creamy. Add eggs, one at a time, beating well after each. Blend in extract and sour cream.

4. MICROWAVE (70%), uncovered, 4 to 5 minutes or until mixture is slightly thickened, stirring with whisk 3 or 4 times. Pour into crust.

5. MICROWAVE (50%), uncovered, 4 to 5 minutes or until center is just about set, rotating pie once if necessary. Cool; refrigerate at least 3 hours before cutting into wedges.

TIPS · Crushed cream-filled Oreo-type cookies can be used for crumbs; omit sugar in crust.
>Extras freeze well for serving another day. Cut into serving size pieces and place a double thickness of waxed paper between each piece for easy removal of just the quantity desired.
