GARDEN FRITTATA

This hearty egg dish is perfect for microwave cooking. You will enjoy all the fresh vegetable flavors.

GARDEN FRITTATA

2 cups cubed scrubbed red potatoes

1 tablespoon water

1 clove garlic, minced

4 green onions, sliced

1/4 cup chopped red bell pepper

2 cups fresh spinach leaves, chopped

4 eggs, beaten

3 tablespoons water

1/2 teaspoon dried basil leaves

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 cup shredded Swiss cheese

1/4 cup grated Parmesan cheese

1. Spray 9-inch glass pie plate with non-stick spray. Combine potatoes, water and garlic in pie pan. Cover tightly.

2. MICROWAVE (100%) 5 to 6 minutes or until potatoes are just about tender, stirring once. Add onions, pepper and spinach; cover tightly.

3. MICROWAVE (100%) 2 to 3 minutes or until vegetabes are bright colored.

4. Meanwhile, beat together eggs, 3 tablespoons water, basil, salt and pepper. Add cheeses and egg mixture to hot vegetables; mix lightly. Cover.

5. MICROWAVE (60 to 70%) 4 to 5 minutes or until egg is just about set. Let stand a few minutes before serving, cut into wedges.


About 6 Servings

TIPS · Refrigerated hash brown potatoes can be substituted for fresh.
>Other favorite spring vegetables such as cut asparagus or garden peas can be substituted for spinach. Reduce amount to 1 cup.

>Non-fat egg substitute can be used for eggs. One cup equals 4 eggs.

>If using a silicone dish, omit non-stick spray. Oil lightly if desired.
