GLAZED CHICKEN & SNAP PEAS

This makes a tasty way to prepare chicken in the microwave oven. A lower power setting cooks the chicken gently without making it tough. The glaze adds a nice color and flavor to the chicken.

GLAZED CHICKEN & SNAP PEAS

4 boneless, skinless chicken breasts (about 20 oz.)

1 clove garlic, minced

2 tablespoons soy sauce

2 tablespoons catsup

1 tablespoon thawed frozen orange juice concentrate

1 tablespoon honey

2 teaspoons cornstarch

1/4 teaspoon dry mustard

2 cups frozen sugar snap peas (from 1-lb. pkg.)

1. Place chicken breasts in single layer in shallow 9-inch round microwave-safe dish. Stir together garlic, soy sauce, catsup, concentrate, honey, cornstarch and mustard in 2-cup glass measure.

2. MICROWAVE (100%), uncovered, 1 1/2 to 2 minutes of until boiling, stirring once. Brush over chicken; cover loosely.

3. MICROWAVE (60 to 70%) 8 to 9 minutes or until chicken is just about done. Let stand covered.

4. MICROWAVE (100%) peas in covered microwave-safe dish 3 to 4 minutes or until tender. Drain; place around chicken. Cover loosely.

5. If necessary, MICROWAVE (60 to 70%) 2 to 3 minutes or until seaming hot.

TIPS · For larger or smaller quantities, allow about 8 minutes/pound of chicken, microwaving at 60 to 70%.

>Chicken thighs can be substituted for breasts; trim away all visible fat.

>Fresh pea pods can be substituted for frozen.
