HONEY GLAZED SALMON-SPINACH SALAD

Microwaved salmon combines nicely with fresh spinach, sliced strawberries, toasted walnuts and crumbled Gorgonzola cheese. Extra honey glaze makes the base for the light dressing. Enjoy with some hearty whole grain bread. .

HONEY GLAZED SALMON-SPINACH SALAD

1/3 cup walnut pieces

2 tablespoons olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

1 lb. salmon fillet

1/4 cup orange juice

1 clove garlic, minced
12 oz. fresh spinach leaves

12 large fresh strawberries, sliced

1/3 cup crumbled Gorgonzola cheese

1. Combine walnuts and oil in 1-cup glass measure.

2. MICROWAVE (100%), uncovered, 1 1/2 to 2 minutes or until nuts are lightly toasted, stirring twice. Remove nuts from oil with slotted spoon. Set aside nuts and oil. Combine honey and mustard in small dish. Place salmon fillet skin-side-down in shallow microwave-safe dish. Spoon 1 tablespoon of honey-mustard mixture onto salmon, being careful to not mix any salmon juices with remaining mustard mixture. Cover salmon tightly.

3. MICROWAVE (70%) 4 to 5 minutes or until salmon flakes easily with fork.

4. Meanwhile, combine remaining honey-mustard mixture with reserved oil. Stir in orange juice and garlic; set aside. Arrange spinach on serving plates; top with strawberries and cheese. Drizzle with honey-mustard mixture. Cut salmon into 4 pieces. Place a piece atop each salad. Sprinkle with toasted walnuts.

TIPS · Salad can be tossed in a large salad bowl. If desired, serve alongside the salmon.
>For 8 oz. salmon, decrease microwave time to 2 1/2 to 3 minutes.

>For smaller serving needs, just mix the desired quantity of greens, fruit and dressing, refrigerating any extra for another meal.
