PECAN PIE BARS

A buttery press-in-the-pan crust is topped with a gooey pecan topping for some really good bars. These may become year-around favorites.

PECAN PIE BARS

3/4 cup packed brown sugar

3/4 cup light corn syrup

6 tablespoons butter

1 cup all purpose flour

1/4 cup sugar

6 tablespoons butter

3 eggs

1 cup chopped pecans

1/2 teaspoon vanilla

1. Combine brown sugar, corn syrup and 6 tablespoons butter in 4-cup microwave-safe measure.

2. MICROWAVE (100%), uncovered, 3 to 3 1/2 minutes or until butter is melted and mixture boils, stirring twice. Set aside to cool. Preheat micro-convection oven to 350°.

3. Combine flour and sugar in mixing bowl. Cut in 6 tablespoons butter with pastry blender or fork until in small pieces. Press evenly into bottom of 8 or 9-inch square silicone pan.

4. Convection Bake at 350° for 13 to 15 minutes or until lightly browned. (Turn oven to preheat to maintain temperature.) Add eggs to cooled brown sugar mixture, one at a time, beating well after each. Stir in pecans and vanilla. Pour over partially baked crust.

5. LOW-MIX (combo-bake) at 350° for 18 to 20 minutes or until filling is set. Cool completely. If desired, remove from silicone pan before cutting into bars.

TIPS · Be sure to grease a glass baking dish. Also, if bars are not removed from silicone, be sure to use a silicone spatula for cutting bars.

>The 8-inch pan will usually rotate in a turntable oven if the corners of the rim of the pan are trimmed. Usually the 9-inch square requires the turntable to be turned off and the pan manually rotated about 1/3 of the way through the baking time.

>Bars store well in covered container. If stacking, place waxed paper between each layer.

>Bars freeze well.
