TURKEY BREAST WITH STUFFING

Try this combination for smaller holiday dinners. The dressing is added toward the end of cooking to avoid overcooking and drying. The combination setting will keep the turkey moist. Use the standing time to cook potatoes and/or a vegetable.

TURKEY BREAST WITH STUFFING

1 1/3 cups water
2 tablespoons butter
1 pkg. (6 oz.) stuffing mix for turkey
1 (2-lb.) turkey breast half

Salt, if desired
1 tablespoon Dijon mustard

2 teaspoons orange marmalade
1/2 teaspoon crushed sage

1. MICROWAVE (100%) water and butter in uncovered 4-cup microwave-safe measure 3 to 4 minutes or until boiling hot.

2. Preheat microwave-convection oven to 375°. Stir stuffing mix into hot water; set aside.

3. Rinse turkey and pat dry. Sprinkle turkey with salt. Place skin-side-up in round or square silicone or glass baking dish. Stir together mustard, marmalade and sage; spread over turkey. Insert microwave-convection oven thermometer into thickest part of breast.

4. High-Mix (combo-roast) at 375° for 30 minutes. Spoon stuffing around turkey, lifting breast as necessary to spread under turkey. Continue to High-Mix (combo-roast) at 375° for 10 to 15 minutes or until thermometer registers 160° and juices run clear. Cover; let stand at least 20 minutes before slicing.

TIPS · If you prefer dark meat, use 2 to 3 turkey thighs (about 2-1/2 lbs.).
>Apple jelly can be used for orange marmalade.

>Since stuffing contains an abundance of salt and turkey is often injected with a saline solution, omit salt if watching sodium.
