Egg Poaching Cups
One of the new items at recent shows is the Silicone Egg Poaching Cups. These come with directions for poaching eggs in a saucepan on the cook top, but they also work well for cooking eggs in the microwave oven. In several classes, I showed making a scrambled egg in one by beating an egg (or two) with 1 tablespoon milk or water/egg. Then, microwaving on high for 30 to 40 seconds or until just about set. Since being home, I have often poached eggs in the cups in the microwave oven. For this, place about 3/4 cup water in the 8x4-inch loaf pan (about 1/2 inch). Then, Microwave on high for 2 minutes or until steaming hot. Break an egg into the poaching cups. Place one or two cups in the water in the loaf pan. Cover with a teflon baking round and cook: 2 eggs for 1 1/2 to 2 minutes on 50% power; 1 egg for 1 1/2 to 2 minutes on 30% power. Let stand a few minutes and enjoy! They also make fun cups for desserts, sauces, dips and cut-up fruit.
Seminar News
There are no seminars scheduled until 2010. Plans are to be in Indio, CA, for the Western Motor Homes Association Rally January 7 to 9. I plan to spend part of the winter in Arizona. Probably in February I will fly to Florida for the Southeast Area Rally, February 3 to 6. There may be a few other opportunities on the west coast before the national Family Motor Coach Rally in Albuquerque March 22 to 25. I look forward to spending time in warmer weather and seeing some of you.
Be sure and come to a class if you are at one of these events.

Newsletter
The Newsletter is going out on a more or less regular monthly or bi-monthly frequency. On the home page, there is a button to sign up for a Newsletter. When you sign up, I start you with the most recent mailing if it was mailed just a few days earlier. Otherwise, you will receive the next issue that is mailed. Sometimes issues come back which may indicate you have changed your email or it did not get entered correctly. Anyway, if you did not receive your issue, just sign up for it again. Also, if you have a screen on incoming email, be sure you allow email from: janet@microwaveconnect.com. Otherwise, it cannot be delivered. If you are not on the list, but would like to receive it, just respond on the home page. If you have questions you'd like addressed, let me know by e-mail through the Contact page.
Oven News
It is not too early to reserve an oven if you would like to purchase one
of the Sharp ovens used in the classes. I have ovens shipped in to use in the class and these are available after the show for purchase at a reduced price. The ovens are usually full-sized Sharp over-the-range models and often I have a choice of black, bisque, white or stainless. They have full warranty and are ideal for a replacement oven in your RV or to use in your home so you can cook the same at home as on the road. If you are interested in purchasing an oven at a future rally, you can contact me ahead of time and I can often order your color preference.
Merchandise News
I found several new merchandise items at the recent Housewares show and have a chance to show them at some of the recent shows. They are now on the "Buy Supplies" page of this web site. Items to look for are silicone mixing and measuring dishes and bowls that can go to high temperatures for cooking and baking, but are also flexible making them easy to handle and store. I also found some silicone spatulas that work well for cutting in the silicone pans without cutting through the silicone. There are also two sizes of round and square casseroles that collapse for easy storage. They have ceramic added to the base and rim to make them more stable for handling. They work well for meats and casseroles as well as going from freezer to convection oven.
Frequently there are questions about silicone cookware and why one can find
such good buys at certain stores. Silicone cookware that is less expensive usually
has fillers which make it less non-stick and also adversely affects the browning
of foods. The brand I carry is 100% silicone and continues to score at the top
in independent testing results. If you are not coming to an upcoming rally, check
the "Buy Supplies" page of this web site for handy cookware to
order by mail.
The high and low racks are available for the Sharp microwave-convection
oven. Some of you have been looking for these since a used coach does not always
have all the oven parts included. They help the air flow evenly around food during convection and combination cooking and are very handy for transferring silicone cookware to and from the oven. The racks are $25/each plus shipping.
Most of your use and care manuals can be ordered from the manufacturer's
web site. Often they can be downloaded onto your computer so you can print out
what you want or refer to it on the computer. If you have trouble locating directions
for your oven, just e-mail me information and I will share what I know about
your oven.
