Use the microwave to easily cook this lighter version of an all-time favorite. Perfect for pairing with fresh berries or other fruit in the weeks ahead. This recipe features half and half and less egg yolks than the traditional version. And, the lower power setting eliminates the need for a double boiler. It makes 6 desserts that store easily in the refrigerator until ready to add the sugar topping and serve.
Light & Easy Creme Brulee
2 cups half & half
2 egg yolks
1/3 cup sugar
1 teaspoon vanilla
3 tablespoons sugar
1. MICROWAVE (100%) half & half in 4-cup measure 3 to 3 1/2 minutes or until steaming hot. Meanwhile, combine egg, egg yolks and 1/3 cup sugar in small dish. Beat well with whisk. Blend a little of the hot cream, stirring well. Blend egg mixture back into hot cream.
2. MICROWAVE (20% power) 3 to 4 minutes or until mixture begins to thicken, stirring twice. Stir in vanilla. Pour into about 6 shallow glass custard or brûlée dishes.
3. MICROWAVE (20% power) 12 to 14 minutes or until just about set in center, rotating dishes if necessary. Chill in refrigerator at least 2 hours or until served.
4. To serve, preheat broiler. Sprinkle about 12 tablespoon of sugar onto each cup. If desired, protect each cup with a circle of foil. Place under broiler about 3 inches from heat for 2 to 3 minutes or until sugar browns and melts. If desired, chill to set sugar.

>For added flavor, use a flavored half & half.
>Add the egg whites to scrambled eggs or use to make favorite macaroon cookies.
>For the sugar topping, use granulated brown sugar or a combination of half white and half brown sugar.
>A gas heat torch makes easy work of melting the sugar topping.
