This is one of my favorite ways to prepare sweet potatoes. The unique combination of garlic flavored sweet potatoes with a sweet gingery coconut topping will enhance many entrees. Prepare ahead and add topping just before serving.
CRUNCHY-TOPPED SWEET POTATOES
2 large or 3 medium sweet potatoes, peeled and sliced
2 tablespoons butter
1 clove garlic, minced
1/4 teaspoon salt
1/4 cup flaked coconut
2 teaspoons grated fresh ginger
1. Combine potatoes, 1 tablespoon of butter, garlic and salt in 1 1/2-quart microwave-safe casserole. Cover tightly.
2. MICROWAVE (100%) 7 to 8 minutes or until potatoes are just about tender, stirring once. Set aside covered. Combine coconut and ginger with remaining 1 tablespoon butter in 1-cup silicone or glass measure.
3. MICROWAVE (100%) , uncovered, 2 to 3 minutes or until lightly toasted, stirring 2 or 3 times. Sprinkle over sweet potatoes.

TIPS · To easily slice larger potatoes, cut in half and place cut-side down on cutting board.
>For a double recipe of topping, increase microwave time to 4 to 5 minutes, but stir often.
