
ALMOND-HONEY GRANOLA
Granola is easily baked with a low-mix combination. Usually granola is baked on a shallow baking pan, but with the combination of microwave and convection heat, it's possible to use a round baking pan that fits on the oven turntable. This combination of oats, nuts and seeds will be both tasty and nutritious, adding extra protein wherever it 's used. Substitute other nuts for the almonds and seeds. Bake extra to share as gifts.
1/4 cup avocado oil
1/4 cup honey
1/4 cup packed brown sugar
4 cups regular rolled oats (not instant)
1 cup sliced or chopped almonds
1 cup shredded or flaked coconut
1 cup raw sunflower seeds
1/2 cup pepitas
2 tablespoons chia seeds
1 teaspoon cinnamon
1 teaspoon vanilla
1. Combine oil, honey and brown sugar in microwave-safe measuring cup.
2. MICROWAVE with 100% power for 45 to 60 seconds or until heated. Stir to combine; set aside.
3. Preheat microwave-convection oven to 325 degrees. Combine oats, nuts, seeds and cinnamon in large mixing bowl; mix well. Stir vanilla into oil mixture. Pour over dry ingrredients; mix well. Spread evenly in ungreased 9-inch round high-sided silicone baking pan.
4. COMBINATION BAKE on low rack with 10% microwave power at 325 degrees for 22 to 25 minutes, stirring once. Cool; stir to break into pieces.

TIPS
>Store in air-tight container at room temperature.
>After baking and cooling, about 1 cup favorite dried fruit, such as cranberries, raisins or chopped mango can be added.
>Maple syrup can be substituted for honey.
>Other nuts, such as pecans, walnuts or hazelnuts can be substituted for part or all of almonds.
>If seeds or nuts are toasted, wait and add after baking.
>When not using silicone, be sure to grease baking pan.
>For Combination settings with 30% microwave, bake with the combination 15 minutes; then Convection-only bake at 325 degrees for 15 minutes.
