Why does it sometimes require so much time for oven to preheat?

Available voltage affects the power available for the oven. Preheating to high temperatures may take extended time with shore power when many others are hooked to the same power source, especially during high air conditioner use. Your generator is a good backup when the voltage is low.

My oven only has one combination setting. How can I use your recipes?

Ovens with only one combination, often refer to the setting as "Roast" and this is usually heat plus 30% power. For recipes that use 30% microwave power, the Roast setting should work well. For recipes that use 10% microwave power, use the Roast setting for about 50% of the recommended cooking time. If additional browning or cooking is required, finish with convection heat. Most of our recipes are quite tolerant of variations so just watch things the first few times, and then adapt as necessary for your oven. Feel free to email me with any questions.

Why do you use so much silicone cookware?

Silicone is a wonderful cookware material that is based on rubber rather than plastic. Although it has been available for years, I first started using it when I learned of the challenges many of you have when traveling. I refer to it as the "RVers Pyrex"! Silicone cookware does everything heatproof glass cookware does, but is lightweight, does not break, usually does not require greasing, and folds easily to sore in small spaces. Use your oven rack or a flat baking sheet to easily transfer to and from the oven. My home kitchen is filled with mostly silicone cookware.
